No mammal makes the necessary enzymes to break down cellulose. Those mammals that eat a lot of cellulose, like cows, need to keep symbiotic bacteria in their digestive tracks to help them digest the cellulose. If we could be somehow given the gene to make enzymes to digest cellulose, then we could get nutrition from eating grass.
I believe that humans could digest cellulose, if they're given the enzyme that digests cellulose. Maybe we need to modify the enzymes those bacteria make.
For instance people that suffer from diabetes, do not suffer now, without needing to insert genes into their genome ;)
If a gene which causes the pancrease to secrete modified cellulases into the intestine is inserted into the genome than maybe we could obtain nutrition from cellulose.
Who knows, maybe the appensix could become useful again.
Does anyone know why man evolved from the ability to digest cellulose anyways?
I don't think any animal can digest cellulose. Even termites have symbiotic protists in their digestive tracts to help them digest cellulose.
I think in theory there isn't any reason why humans couldn't digest cellulose if we were given the necessary gene. I don't think humans evolved away from that capability. I think it is just an ability animals never had.

We need to spit it out and feed them and they will keep us alive.

I don't think that doing an injection every time we eat grass or modifying our DNA is a good idea... :)
Cellulose acts as fibres which are good in digestion. So every one should include salads in their diet so that digestion is complete & good.
